Instructions
- Step 1: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper for easy removal.
- Step 2: In a large mixing bowl, combine the rolled oats, almond flour, cinnamon, and salt. Mix well until combined.
- Step 3: In a separate bowl, whisk together the pineapple juice and honey (or maple syrup). Add the diced mango to this mixture and stir gently to coat the fruit.
- Step 4: Pour the wet ingredients into the dry ingredients and mix until everything is well combined. If using, fold in the shredded coconut at this stage.
- Step 5: Transfer the mixture into the prepared baking dish and spread it evenly. Press down firmly to ensure it holds together during baking.
- Step 6: Bake in the preheated oven for about 25-30 minutes or until golden brown. Allow to cool completely before cutting into bars.
