Ingredients

  • 2 large Eggs
  • 1 slice Sharp Cheddar Cheese

Instructions

  1. Step 1: In a small bowl, whisk together the maple syrup and Dijon mustard to create the sweet and tangy sauce; set aside. Cook the beef bacon in a skillet until it reaches your desired crispness, then remove and drain excess grease.
  2. Step 2: Slice the croissant horizontally. If desired, lightly warm or toast the croissant halves in a dry skillet over low heat for 1-2 minutes until slightly crisp, then set aside.
  3. Step 3: Melt the butter in a non-stick skillet over medium heat. Whisk the eggs with salt and pepper, then pour into the skillet, cooking until set into an egg patty shape.
  4. Step 4: Just before the egg is fully cooked, place the slice of sharp cheddar cheese on top of the egg patty. Cover the skillet briefly (about 30 seconds) until the cheese is melted and gooey, then remove the egg patty from the heat.
  5. Step 5: Assemble the sandwich by spreading the maple mustard sauce generously on the interior sides of both croissant halves. Layer the bottom half of the croissant with the cheese-covered egg patty and the crispy beef bacon strips. Top with the remaining croissant half and serve immediately.

  • If preparing ahead, keep the cooked egg patty, turkey beef bacon, and maple mustard sauce stored separately in the fridge, assembling the sandwich right before serving to keep the croissant perfectly flaky.
