- 1.5 lbs boneless, skinless chicken breast, cut into 1-inch strips
- 2 tablespoons olive oil, divided
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 medium zucchini, quartered and sliced
- 1/2 medium red onion, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
Instructions
- Step 1: Season the chicken strips with half of the oregano, along with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until fully cooked and lightly browned (about 5-7 minutes). Remove the chicken and set aside.
- Step 2: Add the remaining 1 tablespoon of olive oil to the hot pan. Add the sliced red onion and sauté for 2 minutes until softened. Then, add the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
- Step 3: Add the sliced bell peppers and the zucchini to the pan. Stir-fry the vegetables for 4-6 minutes until they are tender-crisp. Sprinkle the remaining oregano over the vegetables.
- Step 4: Return the cooked chicken to the skillet with the vegetables. Toss everything together to ensure the chicken is coated in the vegetable juices and spices, heating for about 1 minute.
- Step 5: Taste the stir fry and adjust the seasoning if desired. Serve immediately, perhaps over rice or garnished with crumbled feta cheese.

- For best texture, store leftovers promptly in an airtight container for up to 3 days, keeping in mind the zucchini and bell peppers will soften slightly upon cooling.
