- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (10.75 oz) condensed cream of chicken soup
- 1 can (10 oz) diced tomatoes and green chilies, undrained
- 1 bag (9 oz) tortilla chips, crushed
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup sliced green onions
Instructions
- Step 1: Preheat oven to 350°F (175°C). Brown ground beef in a skillet over medium heat; drain off any excess grease.
- Step 2: Stir in taco seasoning according to package directions. Add cream of chicken soup and diced tomatoes and green chilies to the skillet. Mix well.
- Step 3: In a 9×13 inch baking dish, spread a layer of crushed tortilla chips.
- Step 4: Pour the beef mixture over the tortilla chips.
- Step 5: Sprinkle the shredded cheddar cheese evenly over the beef mixture.
- Step 6: Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly. Top with sour cream and green onions before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best reheating, microwave individual portions or bake covered in the oven to prevent the chips from getting soggy.
- Garnish with a dollop of guacamole or a sprinkle of cilantro for an extra layer of fresh flavor.
- For a cheesier casserole, reserve some of the cheddar and sprinkle it on during the last few minutes of baking.
