Ingredients
- Chicken breasts: 2 large, boneless, skinless
- Fresh mozzarella: 4 ounces, sliced
- Fresh basil: 1/2 cup, chopped
- Heavy cream: 1 cup
- Garlic: 2 cloves, minced
- Olive oil: 2 tablespoons
- Salt: 1/2 teaspoon
- Black pepper: 1/4 teaspoon
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Step 2: Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side, until lightly browned but not fully cooked.
- Step 3: Transfer chicken breasts to the prepared baking dish. Top each chicken breast with slices of fresh mozzarella.
- Step 4: In the same skillet, add minced garlic and cook for 1 minute until fragrant. Pour in heavy cream and bring to a simmer. Stir in chopped basil.
- Step 5: Pour the basil cream sauce over the chicken breasts in the baking dish.
- Step 6: Bake in the preheated oven for 20-25 minutes, or until chicken is cooked through and mozzarella is melted and bubbly. Serve immediately.
Notes
- Store leftover mozzarella chicken in an airtight container in the refrigerator for up to 3 days.
- When reheating, add a splash of milk or cream to the sauce to prevent it from becoming too thick.
- Serve over a bed of pasta or zucchini noodles to soak up all that delicious basil cream sauce.
- For an extra layer of flavor, try marinating the chicken in Italian dressing for at least 30 minutes before searing.
