- Rolled Oats: 3 cups
- Honey: 1/2 cup
- Peanut Butter (creamy or crunchy): 1/2 cup
- Coconut Oil: 1/4 cup
- Chopped Walnuts: 1/2 cup
- Dried Cranberries: 1/4 cup
- Chia Seeds: 2 tablespoons
- Vanilla Extract: 1 teaspoon
Instructions
- Step 1: Preheat oven to 325°F (160°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- Step 2: In a medium saucepan, combine honey, peanut butter, and coconut oil. Heat over medium-low heat, stirring constantly, until everything is melted and smooth. Remove from heat.
- Step 3: Add rolled oats, chopped walnuts, dried cranberries, chia seeds, and vanilla extract to the saucepan. Stir well to combine, ensuring the oats are evenly coated with the honey-peanut butter mixture.
- Step 4: Press the mixture firmly into the prepared baking pan. Use the back of a spoon or spatula to create an even, compact layer.
- Step 5: Bake for 20-25 minutes, or until the edges are golden brown and the top is set.
- Step 6: Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into squares and store in an airtight container in the refrigerator.
Notes
- Keep these squares chilled for a chewier texture and to help them hold their shape longer.
- If you want a warm, gooey treat, microwave a square for about 10-15 seconds – watch it closely!
- These are perfect as a pre- or post-workout snack, or even crumbled over yogurt for a nutty crunch.
- For extra nutty flavor, toast the walnuts lightly in a dry pan before chopping and adding to the mix.
