Ingredients

  • Chia Seeds: 2 tablespoons

Instructions

  1. Step 1: Preheat oven to 325°F (160°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Step 2: In a medium saucepan, combine honey, peanut butter, and coconut oil. Heat over medium-low heat, stirring constantly, until everything is melted and smooth. Remove from heat.
  3. Step 3: Add rolled oats, chopped walnuts, dried cranberries, chia seeds, and vanilla extract to the saucepan. Stir well to combine, ensuring the oats are evenly coated with the honey-peanut butter mixture.
  4. Step 4: Press the mixture firmly into the prepared baking pan. Use the back of a spoon or spatula to create an even, compact layer.
  5. Step 5: Bake for 20-25 minutes, or until the edges are golden brown and the top is set.
  6. Step 6: Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into squares and store in an airtight container in the refrigerator.

Notes

  • Keep these squares chilled for a chewier texture and to help them hold their shape longer.
  • If you want a warm, gooey treat, microwave a square for about 10-15 seconds – watch it closely!
