Ingredients
Scale
- 1 pound sharp cheddar cheese, grated
- 1 (4 ounce) jar pimentos, drained and chopped
- 1/2 cup mayonnaise
- 1/4 cup cream cheese, softened
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- Step 1: In a large bowl, combine the grated cheddar cheese and chopped pimentos.
- Step 2: Add the mayonnaise, softened cream cheese, onion powder, garlic powder, and cayenne pepper to the cheese mixture.
- Step 3: Mix all ingredients together until well combined and smooth.
- Step 4: Season with salt and pepper to taste.
- Step 5: Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve with crackers, vegetables, or sandwiches.
Notes
- For best flavor, let the pimento cheese chill in the fridge for at least 2 hours, or even overnight, before serving.
- While not usually reheated, leftover pimento cheese is delicious stirred into hot grits or a baked potato.
- Serve your creamy creation not just with crackers, but also spread on celery sticks or as a burger topping for that extra Southern kick.
- Don't be shy with the cayenne pepper; a little extra adds a wonderful warmth that complements the cheesy goodness.
