Slice into sunshine! Master the art of the perfect bar using 2 sticks cold butter cut into flour and sugars for a luxurious crumble. Preheat to 375°F for 30 minutes of bliss.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • All-Purpose Flour: 2 1/4 cups
  • Granulated Sugar: 1 cup
  • Brown Sugar (packed): 1/2 cup
  • Unsalted Butter (cold, cubed): 1 cup (2 sticks)
  • Fresh Peaches (sliced, peeled): 4 cups
  • Cornstarch: 2 tablespoons
  • Ground Cinnamon: 1 teaspoon
  • Salt: 1/2 teaspoon

Instructions

  1. Step 1: Preheat the oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, ensuring an overhang on the long sides for easy removal.
  2. Step 2: In a large bowl, whisk together the flour, granulated sugar, brown sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Reserve 1 1/2 cups of this mixture for the topping; firmly press the remaining mixture into the bottom of the prepared pan to form the crust.
  3. Step 3: In a separate medium bowl, gently toss the sliced peaches with the cornstarch and cinnamon until they are evenly coated. Spread the peach mixture evenly over the pressed crust.
  4. Step 4: Sprinkle the reserved crumble mixture evenly over the top of the peach filling.
  5. Step 5: Bake for 45 to 55 minutes, or until the topping is golden brown and the filling is bubbling. Allow the bars to cool completely in the pan on a wire rack (at least 2 hours) before lifting them out by the parchment paper and cutting them into squares.

Notes

  • These bars keep well in an airtight container at cool room temperature for up to three days, or refrigerate them for longer storage up to a week, separating layers with parchment if stacking.
  • To restore a fresh-baked warmth and softness, reheat individual bars in a microwave for 10 to 15 seconds, or place the tray back in a 300°F oven for five minutes.
  • For the ultimate treat, serve these bars slightly warm, complemented by a scoop of vanilla bean ice cream or a dollop of lightly sweetened sour cream.
  • Ensure your cold, cubed butter is truly icy before cutting it into the dry ingredients, as this step prevents the crumble from spreading or becoming dense during baking.
