Ingredients
Scale
- 3 ripe bananas, mashed
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon alcohol-free vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper for easy removal.
- Step 2: In a large mixing bowl, combine the mashed bananas, peanut butter, granulated sugar, brown sugar, eggs, and alcohol-free vanilla extract. Mix until well combined and smooth.
- Step 3: In a separate bowl, whisk together the all-purpose flour and baking soda. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
- Step 4: Pour half of the batter into the prepared loaf pan. Spread a layer of your favorite jelly or jam over the batter, then top with the remaining batter.
- Step 5: Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean. Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Enjoy!
Notes
- For optimal freshness, store your Peanut Butter & Jelly Banana Bread in an airtight container at room temperature for up to 3 days, or refrigerate it for up to a week.
- To enjoy your banana bread warm and gooey, simply reheat slices in the microwave for about 15-20 seconds, or toast them lightly for a delightful crunch.
- For a fun serving suggestion, try spreading a little extra peanut butter and jelly on top of each slice before serving, or pair it with a scoop of vanilla ice cream for a delicious dessert twist!
- When mixing the batter, be careful not to overmix after adding the dry ingredients; this will keep your bread light and fluffy rather than dense.
