Instructions
- Step 1: Drain and Season the Ricotta. Place the ricotta cheese in a fine-mesh sieve set over a bowl for at least 30 minutes to drain excess moisture. Once drained, transfer the ricotta to a medium bowl and stir in the lemon zest, Kosher salt, and black pepper.
- Step 2: Whip the Ricotta. Using a hand mixer or a stand mixer fitted with the whisk attachment, whip the seasoned ricotta on medium-high speed for 2-3 minutes until it is light, fluffy, and smooth. Alternatively, use a sturdy spatula to beat vigorously by hand.
- Step 3: Prepare the Hot Honey. In a small saucepan, combine the honey and 1/2 teaspoon of the red pepper flakes. Warm gently over low heat for 3-5 minutes, allowing the flavors to infuse, but do not boil. Remove from heat and set aside to cool slightly.
- Step 4: Plate the Dip. Transfer the whipped ricotta mixture to a shallow serving bowl or dish. Use the back of a spoon to create a small well or swirl depression in the center of the dip.
- Step 5: Finish and Serve. Drizzle the warmed Hot Honey mixture over the ricotta, concentrating most of the honey in the center well. Drizzle the 1 tablespoon of olive oil lightly over the dip, then sprinkle with the remaining 1/2 teaspoon of red pepper flakes and the fresh herbs just before serving with crackers or bread.
