Ingredients

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C). On a large baking sheet, toss the carrots with 3 tablespoons of olive oil, 1 teaspoon of kosher salt, and black pepper until evenly coated. Spread the carrots into a single layer.
  2. Step 2: Roast the carrots for 25 to 35 minutes, or until they are fork-tender and slightly caramelized around the edges. Set aside to cool slightly while preparing the topping.
  3. Step 3: Prepare the whipped ricotta: In a medium bowl, combine the ricotta cheese, lemon zest, and a pinch of salt. Using a hand mixer or a whisk, whip the ricotta until it is light, fluffy, and smooth, about 1 to 2 minutes.
