Ingredients
Scale
- 16 oz block cream cheese, fully softened
- 2 large heads of garlic
- 4 oz turkey bresaola, finely diced
- 1/2 cup full-fat sour cream
- 1 Tbsp olive oil
- 1/2 tsp kosher salt (or to taste)
- 1/4 tsp black pepper
- 2 Tbsp hot honey
Instructions
- Step 1: Preheat the oven to 400°F (200°C). Prepare the garlic by slicing off the top quarter of each head to expose the cloves. Drizzle the exposed cloves with olive oil, wrap the heads tightly in aluminum foil, and roast for 40-50 minutes, or until the cloves are golden brown and soft. Set aside to cool slightly.
- Step 2: While the garlic is roasting, cook the diced turkey bresaola in a small skillet over medium heat until crispy. Drain the rendered fat and set the crispy bresaola aside on a paper towel-lined plate.
- Step 3: Once the roasted garlic is cool enough to handle, gently squeeze the softened cloves from the skins into a large mixing bowl. Add the softened cream cheese, sour cream, kosher salt, and black pepper. Use a hand mixer or a sturdy spatula to beat the ingredients until smooth and well combined.
- Step 4: Reserve about one tablespoon of the crispy turkey bresaola for garnish. Gently fold the remaining crispy bresaola into the cream cheese mixture until evenly distributed throughout the dip.
- Step 5: Transfer the dip to a serving bowl. Drizzle the surface liberally with the hot honey and sprinkle the reserved crispy turkey bresaola on top before serving with crackers, pita chips, or vegetable sticks.
Notes
- Store any leftovers in an airtight container in the refrigerator for up to 3 days; allow it to come slightly closer to room temperature before serving again for the best texture.
- Do not attempt to heat the entire dip, as the cream cheese base may separate; instead, let refrigerated leftovers sit on the counter for 20-30 minutes before serving to soften the consistency.
- For a substantial pairing, try spreading this dip generously on toasted baguette slices and topping with thin slices of ripe cherry tomatoes or pickled jalapeños to cut through the richness.
- Ensure the turkey bresaola is truly crispy, not just cooked, before mixing it in, as this textural contrast is essential for balancing the smooth cream cheese.
