Instructions
- Step 1: Preheat the oven to 350°F (175°C). Place the stick of butter into a 9×13 inch baking dish and set the dish in the preheating oven for 5-7 minutes until the butter is completely melted; remove the dish carefully.
- Step 2: In a large mixing bowl, whisk together the flour, 1 cup of the granulated sugar, baking powder, cream of tartar, and 1 teaspoon of the ground cinnamon. Pour the milk into the dry ingredients and stir just until combined and the batter is smooth.
- Step 3: Carefully pour the batter over the melted butter in the baking dish. Do not stir, shake, or swirl the dish; the butter and batter should remain separate, with the batter floating on top of the butter.
- Step 4: Create the snickerdoodle topping by mixing the remaining 1/4 cup of granulated sugar and 2 teaspoons of ground cinnamon in a small bowl. Sprinkle this cinnamon-sugar mixture evenly over the top of the batter in the dish.
- Step 5: Bake for 45 to 55 minutes, or until the top is golden brown, the cobbler is set, and a toothpick inserted into the center comes out clean. Allow the cobbler to cool slightly before serving warm with ice cream or whipped cream.

- Store any leftovers tightly covered in the refrigerator for up to 3 days; while it is best served the day it is made, the flavor and texture remain delightful.
- Ensure the melted butter is hot when you pour the cold batter over it, and absolutely do not stir them together, as this separation is crucial for the cobbler’s signature soft, spongy base.
- To revive the crispy top and warm the interior, reheat individual servings in a microwave for 30-45 seconds, or place the whole dish back into a 300°F oven for 10 minutes.
