- 100g almond flour
- 50g granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- Zest of 1 lemon
- Pinch of salt
- 50g slivered almonds (for topping, optional)
Instructions
- Step 1: Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
- Step 2: In a medium bowl, combine the ricotta cheese, almond flour, sugar, egg, vanilla extract, almond extract, lemon zest, and salt. Mix thoroughly until a smooth dough forms.
- Step 3: Using a spoon or a small cookie scoop, drop rounded tablespoons of the dough onto the prepared baking sheet, leaving some space between each pillow.
- Step 4: If desired, sprinkle the tops of the pillows with slivered almonds.
- Step 5: Bake for 15-20 minutes, or until the edges are lightly golden brown and the centers are set.
- Step 6: Let the ricotta almond pillows cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Store leftover pillows in an airtight container at room temperature for up to 3 days, or freeze them for longer storage.
- Reheat gently in a low oven (120°C/250°F) for a few minutes to restore their softness if they've become slightly firm.
- Serve these delicate pillows warm with a dusting of powdered sugar and a dollop of your favorite fruit curd for an elegant dessert.
