Delicious soft ricotta almond pillows recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 250g soft ricotta cheese
  • 100g almond flour
  • 50g granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • Zest of 1 lemon
  • Pinch of salt
  • 50g slivered almonds (for topping, optional)

Instructions

  1. Step 1: Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. Step 2: In a medium bowl, combine the ricotta cheese, almond flour, sugar, egg, vanilla extract, almond extract, lemon zest, and salt. Mix thoroughly until a smooth dough forms.
  3. Step 3: Using a spoon or a small cookie scoop, drop rounded tablespoons of the dough onto the prepared baking sheet, leaving some space between each pillow.
  4. Step 4: If desired, sprinkle the tops of the pillows with slivered almonds.
  5. Step 5: Bake for 15-20 minutes, or until the edges are lightly golden brown and the centers are set.
  6. Step 6: Let the ricotta almond pillows cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Store leftover pillows in an airtight container at room temperature for up to 3 days, or freeze them for longer storage.
  • Reheat gently in a low oven (120°C/250°F) for a few minutes to restore their softness if they've become slightly firm.
  • Serve these delicate pillows warm with a dusting of powdered sugar and a dollop of your favorite fruit curd for an elegant dessert.
  • For extra almond flavor, toast the almond flour lightly in a dry pan before mixing it into the ricotta mixture.
