Ingredients
Scale
- Chicken breasts (boneless, skinless) 1.5 lbs
- Honey 1/4 cup
- Lime juice (freshly squeezed) 3 tablespoons
- Soy sauce 2 tablespoons
- Red pepper flakes 1 teaspoon
- Garlic (minced) 2 cloves
- Olive oil 1 tablespoon
- Salt and pepper to taste
Instructions
- Step 1: In a medium bowl, whisk together the honey, lime juice, soy sauce, red pepper flakes, and minced garlic. Season with salt and pepper to taste.
- Step 2: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the honey-lime mixture over the chicken, ensuring each piece is well coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Step 3: Heat olive oil in a large skillet over medium-high heat.
- Step 4: Remove the chicken from the marinade (discard the used marinade). Place the chicken breasts in the hot skillet, ensuring they are not overcrowded.
- Step 5: Cook the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the juices run clear when pierced with a fork.
- Step 6: Remove the chicken from the skillet and let it rest for a few minutes before slicing and serving. Garnish with extra lime wedges, if desired.
Notes
- Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat sliced chicken gently in a skillet with a splash of water or broth to retain moisture.
- Serve this chicken over rice with a side of steamed broccoli or a fresh salad for a complete and flavorful meal.
- Don't skip the marinating time – it's key for infusing the chicken with flavor and keeping it juicy.
