Delicate, crustless tea sandwiches featuring sweet lemon-zest cream cheese and fresh berries patted dry to maintain perfect texture. Master the smooth filling technique.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 12 slices white sandwich bread (or brioche), crusts removed
  • 4 ounces cream cheese, softened
  • 1 cup fresh strawberries, thinly sliced
  • 2 tablespoons powdered sugar
  • 1 teaspoon lemon zest, finely grated
  • 1/2 teaspoon alcohol-free vanilla extract
  • 1 tablespoon finely chopped fresh mint (optional)

Instructions

  1. Step 1: Prepare the sweet cream cheese spread. In a small bowl, combine the softened cream cheese, powdered sugar, lemon zest, and vanilla powder; beat with a fork or hand mixer until the mixture is light, creamy, and completely smooth.
  2. Step 2: Prepare the bread and berries. Use a sharp knife to carefully remove the crusts from all 12 slices of sandwich bread. Gently pat the finely sliced strawberries dry with a paper towel to remove excess moisture, which prevents the sandwiches from becoming soggy.
  3. Step 3: Assemble the layers. Spread an even, thin layer of the sweet cream cheese mixture onto one side of all 12 slices of bread, ensuring the spread goes nearly to the edge.
  4. Step 4: Layer the fillings. Arrange the thinly sliced strawberries neatly over the cream cheese layer on 6 of the bread slices. If using mint, sprinkle the chopped mint lightly over the strawberries.
  5. Step 5: Finishing and Cutting. Place the remaining 6 slices of bread (spread side down) on top of the strawberry layers. Gently press the sandwiches to adhere the layers. Cut each assembled sandwich into 2 or 4 small shapes (such as triangles or small rectangles) using a sharp knife, or use a 2-inch cookie cutter to create neat circular sandwiches. Serve immediately or chill briefly before serving.

Notes

  • To prevent the bread from drying out and the strawberries from weeping, store assembled sandwiches tightly covered in the refrigerator for a maximum of 4 hours, ensuring the bread is protected from air.
  • As these sandwiches rely on fresh textures, they are not suitable for reheating; if chilled, allow them to sit at room temperature for 10 minutes before serving for optimal flavor.
  • Elevate your presentation by cutting the crusts off *before* assembling the sandwiches, and serve the finished bites alongside a slightly sweet, chilled rosé or a classic English breakfast tea.
  • For a cleaner cut and to prevent sliding, apply the sweet cream cheese mixture thinly but consistently, ensuring the strawberry slices are centered and never touch the plain bread.
