Tangy, bright yogurt-lemon dressing coats fresh arugula, sweet berries, and crunchy walnuts for the perfect healthy, flavorful salad.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Mixed baby spinach and arugula (5 ounces)
  • Fresh mixed berries (1 cup)
  • Toasted walnuts or pecans (1/2 cup)
  • Plain Greek yogurt (1/4 cup)
  • Fresh lemon juice (2 tablespoons)
  • Finely chopped fresh dill (1 tablespoon)
  • Hemp seeds or chia seeds (1 tablespoon)
  • Salt and black pepper (to taste)

Instructions

  1. Step 1: Prepare the Creamy Lemon Herb Dressing by whisking together the Greek yogurt, fresh lemon juice, chopped dill, and salt and pepper in a small bowl. Taste and adjust seasoning (add more lemon for tang or a pinch of sugar for sweetness, if desired); set aside or chill briefly.
  2. Step 2: Gently wash and dry the mixed spinach and arugula, ensuring all excess moisture is removed. Place the greens into a large serving bowl or individual salad plates.
  3. Step 3: Add the fresh mixed berries and the toasted walnuts (or pecans) directly over the bed of greens.
  4. Step 4: Just before serving, drizzle 2/3 of the prepared Creamy Lemon Herb Dressing over the salad ingredients. Gently toss the salad until the greens and berries are lightly coated, being careful not to bruise the berries.
  5. Step 5: Garnish the finished salad by sprinkling the hemp seeds or chia seeds evenly over the top for added texture and nutritional boost. Serve immediately with the remaining dressing on the side.

Notes

  • Keep the remaining Creamy Lemon Herb Dressing tightly covered and refrigerated for up to 3 days, storing any undressed greens separately to maintain their crisp texture.
  • A key to success is ensuring your spinach and arugula are completely dry after washing, as any moisture left on the leaves will instantly dilute your delicate dressing.
  • This vibrant salad pairs wonderfully as a light lunch or appetizer alongside grilled fish, or try adding crumbled goat cheese for an extra creamy, tangy bite.
  • For the best depth of flavor, toast your walnuts or pecans briefly in a dry skillet until fragrant before adding them; this simple step intensifies their nutty crunch.
