The ultimate adult grilled cheese! Melted Brie meets crisp apple and tart cranberry sauce between buttered sourdough. A flavor explosion.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 slices rustic bread (e.g., sourdough or brioche)
  • 3 ounces Brie cheese, rind removed and sliced
  • 1 tablespoon unsalted butter, softened
  • 1/4 medium apple (such as Granny Smith or Honeycrisp), very thinly sliced
  • 2 tablespoons whole cranberry sauce or preserves
  • 1 teaspoon liquid honey

Instructions

  1. Step 1: Spread the softened butter evenly on one side of each bread slice. These will be the exterior surfaces of the sandwich.
  2. Step 2: Flip the bread slices over. On the interior surface of one slice, spread the cranberry sauce and drizzle the honey; on the other slice, place half of the sliced brie.
  3. Step 3: Layer the remaining ingredients onto the cranberry side: arrange the thinly sliced apple pieces over the sauce, and top with the remaining sliced brie cheese. Place the second slice of bread (cheese side down) on top to assemble the sandwich.
  4. Step 4: Heat a non-stick skillet or griddle over medium-low heat. Place the sandwich onto the heated pan and grill slowly for 3 to 4 minutes until the bottom slice is deeply golden brown. Use a spatula to press down gently.
  5. Step 5: Flip the sandwich and continue to cook for another 3 to 4 minutes, reducing the heat slightly if the bread is browning too quickly, until the second side is golden and the brie cheese is completely melted and gooey.
  6. Step 6: Remove the grilled cheese from the pan, let it rest for one minute, then slice in half diagonally and serve immediately.

Notes

  • Since this grilled cheese is best hot off the grill, save time by pre-slicing your brie and apples up to a day ahead and storing them tightly covered in the fridge.
  • If you must save a slice for later, reheat it slowly in a 350°F oven or a toaster oven for 5-7 minutes to ensure the crust recrisps without drying out the brie.
  • Enhance the sweet-savory balance by serving this grilled cheese with a side of peppery arugula lightly dressed in a vinaigrette, or a small glass of chilled apple cider.
  • For a beautifully melted center without burning the crust, keep your heat consistently at medium-low and use a spatula to gently press the sandwich down—this promotes even browning and ensures the brie is fully gooey.
