  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons liquid honey
  • 1 teaspoon fresh thyme leaves (optional, for garnish)

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes, then slice them into rounds approximately 1/2 inch thick.
  2. Step 2: On a large baking sheet, toss the sweet potato rounds with the olive oil, kosher salt, and black pepper until evenly coated. Arrange the rounds in a single layer.
  3. Step 3: Roast the sweet potato rounds for 20-25 minutes, flipping them halfway through, until they are tender when pierced with a fork and lightly caramelized around the edges.
  4. Step 4: Remove the baking sheet from the oven and evenly sprinkle the crumbled feta cheese over the top of the warm sweet potato rounds. Return the sheet to the oven for 2-3 minutes until the feta is slightly softened.
  5. Step 5: Take the rounds out of the oven and immediately drizzle the honey generously over all the feta-topped sweet potatoes. Garnish with fresh thyme leaves before serving warm.

Notes

  • Store cooled leftovers in an airtight container for up to 3 days, keeping in mind that the feta and honey topping is best enjoyed fresh.
