Melted Jack, crisp turkey beef bacon, and juicy peaches meet sharp red onion in this ultimate sweet-savory quesadilla. Easy instructions included, plus full nutritional data.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Flour Tortillas: 4 large (fajita size)
  • Monterey Jack Cheese: 1 cup, shredded
  • Fresh Peaches: 2 medium, thinly sliced
  • Turkey Bacon: 4 strips, cooked crispy and crumbled
  • Red Onion: 1/4 cup, thinly sliced
  • Butter (or olive oil): 2 tablespoons
  • Honey: 2 teaspoons, for drizzling

Instructions

  1. Step 1: Prepare the filling ingredients by cooking the turkey bacon until crispy, then crumble it into small pieces. Thinly slice the fresh peaches and the red onion. Set all filling components aside.
  2. Step 2: Lay two tortillas flat and evenly distribute half of the shredded cheese onto each. Layer the filling ingredients—peaches, crumbled beef bacon, and red onion slices—over the cheese, making sure to leave a small border around the edge. Top with the remaining cheese.
  3. Step 3: Place the remaining two tortillas on top of the filling to form the quesadillas. Heat 1 tablespoon of butter in a large skillet or griddle over medium heat until melted.
  4. Step 4: Carefully transfer one quesadilla to the hot skillet. Cook for 3 to 4 minutes per side, or until the tortilla is golden brown and the cheese is fully melted and gooey. Repeat the process with the remaining butter and second quesadilla.
  5. Step 5: Remove the cooked quesadillas from the skillet and let them rest on a cutting board for one minute. Slice each quesadilla into 4 wedges, drizzle generously with honey, and serve immediately.

Notes

  • Store any leftover wedges tightly wrapped in the fridge for up to two days, knowing the tortilla will lose some initial crispness.
  • Reheat leftovers slowly in a dry skillet over medium-low heat to ensure the cheese re-melts and the tortilla gets crispy again—skip the microwave.
  • Try pairing the sweet honey drizzle with something tangy like a dollop of sour cream mixed with a light dusting of chili powder for an extra layer of savory contrast.
  • To ensure your quesadilla filling heats through completely without burning the tortilla, use medium-low heat and press lightly with a spatula to encourage quick, even melting.
