Ingredients

Instructions

  1. Step 1: Preheat the oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides. In a medium bowl, combine the flour, 1/2 cup of the granulated sugar, and the cold diced butter until the mixture resembles coarse crumbs.   2. Step 2: While the crust is baking, prepare the filling. In a separate bowl, whisk together the remaining 1 1/2 cups of granulated sugar, the eggs, lemon juice, and lemon zest until the mixture is smooth and pale yellow.
  3. Step 3: Gently fold the cranberries into the prepared lemon mixture. Once the crust is finished par-baking, carefully pour the cranberry-lemon filling evenly over the hot crust.
  4. Step 4: Return the pan to the oven and bake for an additional 20-25 minutes, or until the center is set and the edges are lightly golden. The filling should no longer jiggle when the pan is lightly tapped.
