  • 1/2 cup chopped celery
  • 1/4 cup blue cheese or ranch dressing

Instructions

  1. Step 1: Cook the chicken. Season the chicken breasts with salt, pepper, and garlic powder. Cook them using your preferred method (grilling, baking, or instant pot) until the internal temperature reaches 165°F. Once cooked, shred the chicken using two forks or a hand mixer and set aside.
  2. Step 2: Prepare the buffalo sauce mixture. In a small saucepan over medium-low heat, melt the 1/4 cup of unsalted butter. Once melted, stir in the 1/2 cup of buffalo wing sauce and continue stirring for about 2 minutes until the sauce is fully emulsified and heated through.
  3. Step 3: Coat the chicken. Transfer the shredded chicken to a medium bowl and pour the prepared buffalo sauce mixture over the chicken. Toss thoroughly until every piece of chicken is evenly coated. Keep warm.
  4. Step 4: Assemble the bowl base. Divide the 3 cups of cooked rice (or cauliflower rice) evenly among four serving bowls. Add a handful of mixed greens or lettuce to each bowl, placing them next to the rice base.
  5. Step 5: Finish and serve. Scoop the saucy buffalo chicken onto the base in each bowl. Top with the chopped celery for crunch. Drizzle each bowl generously with the blue cheese or ranch dressing before serving immediately.
