  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla bean paste
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Step 1: In a saucepan, combine the heavy cream, whole milk, and Thai tea leaves. Heat the mixture over medium heat until it begins to simmer, then remove from heat and let it steep for about 15 minutes to infuse the flavors.
  2. Step 2: After steeping, strain the mixture through a fine-mesh sieve to remove the tea leaves. Return the infused cream and milk mixture to the saucepan.
  3. Step 3: In a mixing bowl, whisk together the egg yolks and granulated sugar until well combined and slightly thickened. Gradually add the warm cream mixture into the egg yolk mixture while continuously whisking to temper the eggs.
  4. Step 4: Add the vanilla powder to the mixture and stir until fully incorporated. Pour the custard into ramekins, filling them about three-quarters full.
  5. Step 5: Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake at 325°F (160°C) for about 30-35 minutes, or until set but still slightly jiggly in the center.
  6. Step 6: Once baked, remove from the oven and let cool to room temperature before refrigerating for at least 4 hours or overnight.
