Ingredients

  • All-purpose flour (2 3/4 cups)
  • Granulated sugar (1 1/2 cups)

  • vanilla bean paste (3 teaspoons total, divided)
  • Baking powder (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Powdered sugar (3 cups, sifted)

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the long sides to easily lift the bars out later.
  2. Step 2: In a large bowl, cream together the 1 cup of softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by 2 teaspoons of vanilla powder. In a separate bowl, whisk together the flour, baking powder, and salt, then gradually add the dry mixture to the wet ingredients, mixing until just combined.
  3. Step 3: Press the prepared cookie dough evenly into the bottom of the lined pan. Bake for 25 to 30 minutes, or until the edges are lightly golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and allow the bars to cool completely in the pan on a wire rack (about 1-2 hours).
  4. Step 4: While the bars cool, prepare the frosting: Beat the remaining 1/2 cup of softened butter until smooth. Gradually add the 3 cups of sifted powdered sugar, alternating with 2-4 tablespoons of milk or heavy cream until the frosting reaches a spreadable consistency. Stir in the remaining 1 teaspoon of vanilla powder.
  5. Step 5: Once the sugar cookie bars are completely cooled, lift them out of the pan using the parchment overhang. Evenly spread the buttercream frosting over the top, immediately sprinkle with holiday decorations (such as festive sprinkles or colored sugar), and cut into 24 squares before serving.
