  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla bean paste
  • 1/2 cup creamy peanut butter
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup white chocolate chips

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Grease and lightly flour an 8×8 inch baking pan.
  2. Step 2: In a large bowl, combine melted butter and brown sugar. Beat until smooth. Beat in the egg and alcohol-free vanilla extract until well combined. Stir in the peanut butter until fully incorporated.
  3. Step 3: In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  4. Step 4: Fold in the white chocolate chips.
  5. Step 5: Pour the batter into the prepared baking pan and spread evenly.
  6. Step 6: Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Let cool completely in the pan before cutting into squares.

Notes

  • Store leftover blondies in an airtight container at room temperature for up to 3 days to maintain their chewy texture.
  • For a warm, gooey treat, microwave a blondie square for 10-15 seconds before serving.
  • Serve these blondies with a scoop of vanilla ice cream and a sprinkle of sea salt to enhance the flavors.
  • Chef's secret: underbaking slightly (toothpick with moist crumbs) keeps these blondies extra fudgy and delicious.
