- 2 slices bread
- 1/2 avocado, sliced
- 2–3 slices tomato
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon mayonnaise
- 1/2 teaspoon lemon juice
- Optional: lettuce leaves
Instructions
- Step 1: Lightly toast the bread slices.
- Step 2: In a small bowl, mash half of the sliced avocado with lemon juice, salt, and pepper.
- Step 3: Spread the mashed avocado mixture on one slice of bread.
- Step 4: Spread mayonnaise on the other slice of bread.
- Step 5: Arrange the remaining avocado slices and tomato slices on top of the avocado spread. Add lettuce leaves, if desired.
- Step 6: Place the mayonnaise-covered bread slice on top of the tomatoes to form the sandwich. Cut in half and serve.
Notes
- For best flavor, assemble the sandwich just before serving to prevent the bread from getting soggy.
- Leftover sandwich is best enjoyed immediately, but can be stored in the fridge for a few hours; remove lettuce if used.
- Serve with a side of tortilla chips or a light salad for a more complete meal.
- A sprinkle of red pepper flakes in the mashed avocado adds a subtle kick!
