Ingredients
Scale
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1/2 cup crushed pineapple, drained
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- Step 2: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Step 3: Add the eggs one at a time, mixing well after each addition. Then stir in the crushed pineapple until fully combined.
- Step 4: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just combined.

- Step 6: Allow the cupcakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For best results, store leftover Tropical Bliss Pineapple Cupcakes in an airtight container at room temperature for up to three days, or refrigerate them for up to a week to maintain freshness.
- If you want to enjoy your cupcakes warm, simply microwave them for about 10-15 seconds, or pop them in a preheated oven at 300°F (150°C) for a few minutes until heated through.
- Serve your pineapple cupcakes with a dollop of whipped cream or a scoop of coconut ice cream on top for an extra tropical touch that enhances their flavor.
- For a unique twist, consider adding shredded coconut or chopped macadamia nuts into the batter for added texture and flavor that complements the pineapple beautifully.
