Ingredients
Scale
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup ube puree
- 1/4 cup milk
- 1 large egg
Instructions
- Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Step 2: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- Step 3: Add the cold cubed butter to the dry ingredients and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Step 4: In another bowl, mix the ube puree, milk, and egg until smooth. Pour this mixture into the dry ingredients and stir gently until just combined; do not overmix.
- Step 5: Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a circle about 1 inch thick, then cut into wedges or use a biscuit cutter to shape.
- Step 6: Place the scones on the prepared baking sheet and bake for about 15-20 minutes, or until lightly golden. Let them cool slightly before glazing.
- Step 7: For the glaze, combine powdered sugar with additional ube puree to reach your desired consistency, then drizzle over the warm scones before serving.
Notes
- To store your ube scones, place them in an airtight container at room temperature for up to three days, or refrigerate for longer freshness.
- For a delightful treat, reheat the scones in a microwave for about 10-15 seconds or pop them in a preheated oven at 350°F (175°C) for 5-7 minutes until warmed through.
- Serve your ube scones with a dollop of whipped cream or alongside a cup of coffee or tea to enhance their rich flavor.
- For best results, ensure that your butter is very cold when mixing; this helps create flaky layers in the scones, making them light and tender.
