- 2 ripe bananas
- 1 cup rolled oats (not instant)
- 1/4 teaspoon ground cinnamon (optional, for flavor)
- 1/4 cup chocolate chips (optional, for added sweetness)
- 1/4 cup chopped nuts (optional, for texture)
- 1/2 teaspoon vanilla extract (optional, for depth of flavor)
Instructions
- Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Step 2: In a medium bowl, mash the bananas very well with a fork until they are almost completely liquid.
- Step 3: Add the rolled oats, cinnamon, vanilla, chocolate chips and nuts (if using) to the mashed bananas. Mix thoroughly until everything is evenly combined. The mixture should be fairly thick.
- Step 4: Drop spoonfuls of the mixture onto the prepared baking sheet. Flatten them slightly with the back of a spoon.
- Step 5: Bake for 12-15 minutes, or until the edges are golden brown and the cookies are set.
- Step 6: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Store cooled cookies in an airtight container at room temperature for up to 3 days, or in the refrigerator for longer freshness.
- A quick zap in the microwave (10-15 seconds) will make them warm and soft again, almost like freshly baked!
- Serve these simple cookies with a dollop of Greek yogurt and a drizzle of honey for a satisfying and healthy treat.
- For chewier cookies, let the oat mixture sit for 10 minutes before baking; this allows the oats to absorb more moisture from the bananas.
