  • 1 cup rolled oats (not instant)

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Step 2: In a medium bowl, mash the bananas very well with a fork until they are almost completely liquid.
  3. Step 3: Add the rolled oats, cinnamon, vanilla, chocolate chips and nuts (if using) to the mashed bananas. Mix thoroughly until everything is evenly combined. The mixture should be fairly thick.
  4. Step 4: Drop spoonfuls of the mixture onto the prepared baking sheet. Flatten them slightly with the back of a spoon.
  5. Step 5: Bake for 12-15 minutes, or until the edges are golden brown and the cookies are set.
  6. Step 6: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
