Instructions
- Step 1: Combine the Greek yogurt, finely chopped strawberries, honey (or maple syrup), and vanilla powder in a medium bowl until thoroughly mixed.
- Step 2: Line a small baking sheet with parchment paper. Using a tablespoon or a small cookie scoop, drop 8-10 clusters of the yogurt mixture onto the lined sheet, spacing them slightly apart. Flatten the clusters slightly for easier coating later.
- Step 3: Place the baking sheet in the freezer for a minimum of 2 hours, or until the yogurt clusters are completely solid and easy to handle.
- Step 4: Once the clusters are frozen, melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until the mixture is completely smooth and glossy.
- Step 5: Quickly dip each frozen yogurt cluster into the melted chocolate, ensuring it is fully coated. Allow excess chocolate to drip off immediately before the cluster begins to soften.
- Step 6: Return the coated clusters to the parchment-lined sheet. Immediately sprinkle with chopped pistachios (if using). Place the sheet back in the freezer for 10-15 minutes until the chocolate shell has fully hardened. Store in an airtight container in the freezer.
