- 1.5 lbs Brussels Sprouts, trimmed and halved
- 3 tablespoons Olive Oil (divided)
- 1/2 cup Freshly Grated Parmesan Cheese (divided)
- 1/4 cup Mayonnaise

- 2 cloves Garlic, minced
- 1 teaspoon Anchovy Paste (or Worcestershire sauce)
- Salt and Freshly Ground Black Pepper, to taste
Instructions
- Step 1: Preheat the oven to 400°F (200°C). On a baking sheet, toss the halved Brussels sprouts with 1 tablespoon of olive oil, salt, and pepper. Roast for 15 to 20 minutes, or until the sprouts are tender and the outer leaves are slightly crispy and charred.
- Step 2: While the sprouts are roasting, prepare the Caesar dressing. In a small bowl, whisk together the mayonnaise, lemon juice, minced garlic, anchovy paste, and the remaining 2 tablespoons of olive oil until the mixture is smooth and emulsified.
- Step 3: Stir 1/4 cup of the grated Parmesan cheese into the prepared dressing. Taste the dressing and adjust seasonings with additional salt, pepper, or lemon juice as desired.
- Step 4: Once the sprouts are finished roasting, transfer them immediately to a large mixing bowl. Pour about half to two-thirds of the Caesar dressing over the warm sprouts.
- Step 5: Toss the sprouts gently to ensure they are evenly coated. Transfer the dressed Brussels sprouts to a serving platter and garnish generously with the remaining 1/4 cup of grated Parmesan cheese. Serve immediately while warm.

- For leftovers, store the fully roasted sprouts and the creamy Caesar dressing separately; this prevents the sprouts from becoming soggy and keeps the dressing stable.
- To refresh leftovers, skip the microwave and reheat the roasted sprouts for 5 to 7 minutes in a 350°F oven until warmed through and slightly crisp before adding the dressing.
- This warm Caesar dish pairs wonderfully with grilled or seared proteins like salmon or steak, or you can add textural interest by crumbling thick-cut beef bacon over the finished platter.
- Achieving the perfect "char" is key, so if your sprouts look too light after 15 minutes, increase the oven temperature to 425°F for the final few minutes of roasting to encourage crispy edges.
