Ingredients
Scale
- 1 (8 ounce) block Feta Cheese (brined, drained well)
- 1/4 cup Full-Fat Plain Greek Yogurt
- 3 tablespoons Extra Virgin Olive Oil (plus extra for drizzling)
- 1 teaspoon Fresh Lemon Juice
- 1/4 cup Honey (preferably raw or hot honey)
- 1/2 teaspoon Red Pepper Flakes (for garnish)
- Freshly ground Black Pepper (to taste)
Instructions
- Step 1: Drain the feta block thoroughly, patting it dry with paper towels to remove excess moisture. Combine the drained feta, Greek yogurt, olive oil, and lemon juice in the bowl of a food processor.
- Step 2: Process the ingredients on high speed, scraping down the sides of the bowl every 30-45 seconds. Continue blending until the mixture is completely smooth, light, and airy, which may take 2 to 3 minutes.
- Step 3: Taste the whipped feta and add a few grinds of black pepper, adjusting seasoning if necessary (salt is usually not needed as feta is already salty). If the mixture seems too thick, add one teaspoon of olive oil or yogurt until the desired creamy consistency is achieved.
- Step 4: Transfer the whipped feta mixture to a shallow serving dish or small bowl, using a spoon to create light swirls or a shallow indentation (well) in the center.
- Step 5: Drizzle the entire surface generously with the honey. Finish the dish by sprinkling the red pepper flakes and a final light drizzle of olive oil over the top. Serve immediately with crusty bread, pita chips, or fresh vegetables.
Notes
- Store leftover whipped feta in an airtight container for up to 4 days, but reserve the honey and pepper flakes for fresh topping when ready to serve.
- If the stored dip feels too stiff straight from the refrigerator, let it sit on the counter for 15-20 minutes before serving to restore the creamy, spreadable texture.
- For an elegant appetizer pairing, serve the dip alongside sliced Granny Smith apples, slightly warmed figs, or lightly charred asparagus spears.
- To guarantee the smoothest, airiest texture, ensure your feta is extremely dry before processing, as any residual moisture will make the final dip grainy and runny.
