- 12 ounces white chocolate, finely chopped
- 1/2 cup heavy cream
- 1/4 cup orange juice, freshly squeezed
- 2 tablespoons orange zest
- 1 tablespoon orange liqueur (optional)

Instructions
- Step 1: In a heatproof bowl set over a saucepan of simmering water (double boiler), combine the finely chopped white chocolate, heavy cream, orange juice, orange zest, orange liqueur (if using), and salt. Stir constantly until the chocolate is completely melted and the mixture is smooth.
- Step 2: Remove the bowl from the heat and let the mixture cool slightly. Cover the bowl with plastic wrap, pressing the wrap directly onto the surface of the chocolate mixture. Refrigerate for at least 2 hours, or preferably overnight, until the mixture is firm enough to roll.
- Step 3: Once firm, use a spoon or small cookie scoop to portion out the chocolate mixture. Roll each portion into a smooth ball using your hands. Place the rolled truffles on a baking sheet lined with parchment paper. Return the baking sheet to the refrigerator for another 30 minutes to allow the truffles to firm up even more.
- Step 4: While the truffles are chilling, melt the remaining 8 ounces of white chocolate for coating in a double boiler or in the microwave in 30-second intervals, stirring in between, until smooth.
- Step 5: Remove the truffles from the refrigerator and dip each truffle into the melted white chocolate, using forks or dipping tools to coat completely. Place the dipped truffles back on the parchment-lined baking sheet.
- Step 6: Before the chocolate sets, sprinkle the truffles with orange zest for garnish, if desired. Refrigerate the truffles for at least 15 minutes to allow the chocolate coating to harden completely. Store in an airtight container in the refrigerator.
