- 12 ounces white chocolate, finely chopped
- 1/2 cup heavy cream
- 1/4 cup orange juice, freshly squeezed
- 2 tablespoons orange zest
- 1/4 teaspoon orange extract
- Pinch of salt
- 1 cup white chocolate, for coating
- Orange zest, for garnish (optional)
Instructions
- Step 1: Place the chopped white chocolate in a heatproof bowl.
- Step 2: In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
- Step 3: Pour the hot cream over the white chocolate and let it sit for 1 minute to soften the chocolate. Gently stir until the chocolate is completely melted and smooth.
- Step 4: Stir in the orange juice, orange zest, orange extract, and salt until well combined.
- Step 5: Cover the bowl with plastic wrap, pressing it directly onto the surface of the chocolate mixture. Refrigerate for at least 2 hours, or preferably overnight, until firm.
- Step 6: Use a small spoon or melon baller to scoop out portions of the chilled truffle mixture. Roll each portion between your palms to form a smooth ball. Place the balls on a parchment-lined baking sheet. Return the truffles to the refrigerator to chill for another 30 minutes.
- Step 7: Melt the remaining 1 cup of white chocolate for coating in a double boiler or microwave, stirring frequently until smooth. Dip each truffle into the melted white chocolate, using a fork or dipping tools to coat completely. Place the coated truffles back on the parchment-lined baking sheet.
- Step 8: Sprinkle the truffles with orange zest (if using) before the chocolate sets. Refrigerate for another 15-20 minutes to allow the coating to harden completely. Store in an airtight container in the refrigerator.
Notes
- Store these truffles in the refrigerator for up to a week, as the cream filling will soften at room temperature.
- There's no need to reheat these, as they are best served chilled straight from the fridge.
- Serve these decadent truffles as an elegant after-dinner treat, paired with a glass of chilled Moscato.
- Chef's tip: Make sure your bowl is completely dry when melting the white chocolate for coating, as even a tiny bit of water can cause it to seize.
