Savor the deep, earthy flavors of browned cremini and shiitake mushrooms infused with garlic and thyme, layered over crispy flatbread and mozzarella.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • Two flatbread rounds (about 8-10 inches each) or naan bread
  • 8 ounces mixed mushrooms (cremini, shiitake), thinly sliced
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the sliced mushrooms and sauté for 5-7 minutes until they have released their liquid and browned slightly.
  2. Step 2: Reduce the heat to medium-low. Stir in the minced garlic and fresh thyme, cooking for 1 minute until fragrant. Season the mushroom mixture generously with salt and black pepper, then remove from heat.
  3. Step 3: Place the flatbread rounds directly onto a baking sheet. Brush the edges of each flatbread with the remaining 1 tablespoon of olive oil.
  4. Step 4: Distribute the mushroom mixture evenly over the two flatbreads, followed by the shredded mozzarella and grated Parmesan cheese.
  5. Step 5: Bake the flatbread pizzas for 8-12 minutes, or until the cheese is melted, bubbling, and the edges of the flatbread are golden brown and crisp. Slice immediately and serve warm.

Notes

  • If you have leftovers, allow the pizza to cool completely before wrapping tightly in foil or placing in an airtight container; stored this way, the flatbread will remain fresh for up to three days in the refrigerator.
  • For the best results when reheating, place slices directly on a baking sheet in a 350°F oven for about 5 minutes, ensuring the crust crisps up instead of becoming soggy.
  • Elevate the flavor profile right before serving by adding a sprinkle of fresh parsley and a delicate drizzle of balsamic glaze for a touch of sweet acidity.
  • To guarantee concentrated mushroom flavor, always ensure the mushrooms are thoroughly browned and all their moisture has evaporated during the initial sauté, preventing a watery flatbread crust.
