  • 1/2 cup shredded carrots
  • 8 large butter lettuce leaves or whole wheat tortillas

Instructions

  1. Step 1: Prepare the peanut sauce by whisking together the peanut butter, soy sauce, lime juice, honey, and sesame oil in a medium bowl until the mixture is smooth and well combined. If the sauce is too thick, add 1-2 teaspoons of hot water until the desired consistency is reached.
  2. Step 2: In a large mixing bowl, combine the shredded cooked chicken breast and the shredded carrots. Pour half of the prepared peanut sauce over the chicken and vegetable mixture and toss gently until the filling is thoroughly coated. Reserve the remaining sauce for dipping.
  3. Step 3: Lay the lettuce leaves or tortillas flat on a clean surface. If using tortillas, you may wish to lightly warm them according to package instructions.
  4. Step 4: Spoon approximately 1/4 cup of the chicken filling mixture onto the center of each lettuce leaf or tortilla.
  5. Step 5: Fold the sides of the wrap inward, then roll tightly from the bottom upward. Slice the wraps diagonally in half and serve immediately with the reserved peanut sauce on the side for dipping.
